dc.description.abstract Beer is the world’s most widely consumed and probably the oldest alcoholic beverage made from hops with other raw material fermentation. The research project was production of beer by Rhamnus prinoides Gesho were purchased commercially and collected from Weyena kebeles (Janamora woreda, North Gondar administrative zone), Tekel dengay, (Armacheho woreda, Central Gondar administrative zone), Debretabor Megendy Giworgis kebele (Farta woreda, South Gondar administrative zone) and Kuke Yeleshe kebele (Debre-Berhan, Woreda), Yebakela kebele (Gozamen woreda, East Gojam administative zone) in Ethiopia. The samples were extracted by ethanol and concentrated by rota vapor also analysed by Uv-Vis spectrophotometrer. Rhamnus prinoides hops bitterness of DB 23.51-27.91, DT 26.31-29.13, TD 20.23-23.8, JM 17.50- 19.83, Gojame 18.33-21.81 and standards of Germaney 28.84-32.18 bitterness unit were determined. Extract of Debre Tabor and Debre Birhan had the greatest potential as substitute for imported hops With selected processes variables of temperature= 134℃, time=15min and pH=5.2 due to its high bitter taste effect, beers were produced on the pilots scale and the concerned body shall build and improve the Ethiopian national hops industries en_US
